Bugs Bunny With a fantastic source of antioxidant this refreshing and warming drink is a great way to stave off those winter blues. Ingredients Thumbnail of ginger Freshly squeezed orange juice Carrot juice Ground ginger Celery stick Method Simply muddle a thumbnail of fresh ginger in the bottom of a high ball glass, fill with ice and pour over ice equal parts freshly squeezed orange juice, carrot juice just short of the rim of the glass. Add a dash of ground ginger and garnish with a stick of celery. Breakfastreakfast in a glass This nutritious drink is a great start to the day if you don’t have time for breakfast. It provides many essential nutrients such as carbohydrates, protein, vitamin e, vitamin b including b6, zinc and magnesium. Ingredients 5 strawberries (plus 1 for garnish) 200ml natural yoghurt 1 passionfruit 1 tsp runny honey Method Blended yoghurt, strawberries, passion fruit pulp and honey, and pour into a 13oz rocks glass, garnish with another strawberry and a drizzle of honey The Flu Fighters Helps chase away those winter germs, the enzymes in the pineapple keep you alert and the ginger and mint add enough zing to keep you breathing more easily. Ingredients 2 thumbnails of fresh ginger 6 mint leaves ¼ pineapple, skinned and cut into chunks 100ml pineapple juice Method Blend with or without a scoop of ice all of the ingredients and simply pour into a wine glass and serve. PAN SEARED SMOKED SALMON, CELERIAC REMOULADE Salmon is low in calories and saturated fat, yet high in protein, and a unique type of health-promoting fat, the omega-3 essential fatty acids. Protein is vital to maintain muscle, and to help you feel full whist as their name implies, essential fatty acids are essential for human health but because they cannot be made by the body, they must be obtained from foods. This recipe is great Ingredients 4x 20g pieces of smoked salmon ½ small celeriac shredded or crated (peeled) Juice ½ lemon Pinch sugar 1 tbsp capers 3 large tbsp mayonnaise 1 tbsp Dijon mustard 2 tbsp flat parsley & chives Salt & pepper Olive oil Method Grate the peeled celeriac and finely chop the capers and herbs. Place the celeriac in a bowl place the celeriac, then add ½ you lemon juice, chopped capers & sugar. Leave to marinade for a couple of minutes. Add the mayonnaise, Dijon mustard & seasoning, and then taste; it should have a little sharpness; if not add a little more lemon, check for seasoning. Finish with finely chopped herbs with a little olive oil. In a hot pan sear the smoked salmon for a minute or two each side depending on size. Place a little remoulade on plate with warm smoked salmon and enjoy! PS: Remoulade is great with all kinds of cured & cold meats, cured & smoked fish.
